    The activity as defined by the supplier Novozyme is as follows:  1 Inulase Unit (INU) is the amount of enzyme which produces 1 micromole reducing carbohydrate per minute under the given analytical conditions using inulin as substrate.  The reducing carbohydrate is calculated as glucose.

    The optimal pH range for I2017 is 4.0 to 5.2, and the optimal temperature range is 50 to 70 °C.
