生化/生理作用

壳聚糖酶可在N-乙酰-D-氨基葡萄糖和D-氨基葡萄糖残基之间的β(1,4)键处催化N-乙酰化壳聚糖的内水解。来自灰链霉菌的壳聚糖酶能够水解壳聚糖和羧甲基纤维素。壳聚糖酶存在于多种类型的微生物中,并可用于真菌细胞壁的裂解。
