应用

本品用于酶法定量检测食品和其他物质中的蔗糖。蔗糖在转化酶的作用下水解为葡萄糖和果糖。己糖激酶催化三磷酸腺苷 (ATP) 磷酸化葡萄糖和果糖。然后葡萄糖六磷酸脱氢酶 (G6PDH) 在烟酰胺腺嘌呤二核苷酸 (NAD) 的存在下催化 6-磷酸葡萄糖 (G6P) 氧化为 6-磷酸葡萄糖酸酯。在此氧化过程中,等摩尔的 NAD 被还原为 HADH。在 340nm 处增加的吸收值与蔗糖浓度直接成正比。
