应用

唾液酸醛缩酶可用于合成C(6)至C(10)的非天然糖,以设计糖酶的拮抗剂和抑制剂。

单位定义

在37°C、pH 8.0条件下,一单位将会在每分钟内催化从Man-N-Ac和丙酮酸形成1.0 μmol Neu-5-Ac。
