一般描述
β-葡糖苷酶可通过作用于末端非还原的b(1→4)-连接的D-葡萄糖残基来水解碳水化合物,同时释放D-葡萄糖。生物体需要β-葡糖苷酶来消化纤维素。溶菌酶,一种存在于泪液中的β-葡萄糖苷酶,可作用于革兰氏阴性细菌的肽聚糖细胞壁中存在的β(1→4)葡萄糖键,并有助于预防眼睛中的细菌感染。β-葡萄糖苷酶活性的缺失与戈谢病′和帕金森病′有关。

原理
