一般描述
淀粉酶是一种糖苷水解酶，它能裂解多糖(如淀粉或糖原)中的葡聚糖键，从而释放多糖分子。α-淀粉酶在动物、植物、和许多真菌中均有发现。在哺乳动物中，α-淀粉酶是淀粉酶的主要形式，是饮食消化的主要酶之一。α淀粉酶的活性和稳定性都依赖于钙离子。在人类中，α-淀粉酶的水平在胰腺和唾液分泌物中最高。血液和尿液淀粉酶水平的升高是由于胰腺疾病和唾液腺损伤引起的。唾液淀粉酶活性的增加也是交感神经系统活性增加的一个标志。
应用

原理
淀粉酶活性测定试剂盒可定量测定多种生物样品中的淀粉酶活性。该试剂盒快速，方便并且灵敏。在该试剂盒中，淀粉酶活性是通过耦合酶法测定的，其产生一个比色(405 nm)的产品，与底物的数量成比例的乙烯-pNP-G7，由淀粉酶裂解得到。一个单位的淀粉酶，在25℃下，每分钟可裂解乙烯-pNP-G7而产生1.0 μmole的 p-硝基酚。
