General description

Maltotetraose is a maltooligosaccharide.

Application

Maltotetraose producing amylases are highly desirable for application in bread making and other food industries. It has been used in a study to characterize an exo-acting intracellular α-amylase from the hyperthermophilic bacterium Thermotoga neapolitana.

Maltooligosaccharides especially maltotriose and maltotetraose producing amylases are highly desirable for application in bread making and other food industries. A maltotriose and maltotetraose producing amylase from moderately halophilic Marinobacter sp. EMB8 is described. Under optimized culture conditions, 48.0 IU/mL amylase

Glucoamylases are inverting exo-acting starch hydrolases releasing beta-glucose from the non-reducing ends of starch and related substrates. The majority of glucoamylases are multidomain enzymes consisting of a catalytic domain connected to a starch-binding domain by an O-glycosylated linker region. Three-dimensional
