General description
β-乳球蛋白B（β-LG B）为 β-乳球蛋白同工型，是由162个氨基酸组成的小分子蛋白，分子量为18.2 kDa 最适pH为5.2。 在酪蛋白中含量高，在生牛乳中含量相对较低。β-LG 有八股 β桶状结构（A-H链）后接三转角 α螺旋和最终 β链（I链），形成二聚体的一部分。
奶牛乳汁中含有β-乳球蛋白 (BLG)。它天然存在于许多遗传变异体中，最普遍的牛变体被称为BLG A和BLG B。
Application
β-乳球蛋白用于通过等电聚焦电泳法鉴定牛奶中 κ-酪蛋白的遗传变异。
