应用
牛奶中的过氧化物酶用作牛奶过氧化物酶标准品,研究在原料乳中存在乳过氧化物酶时H2O2对抑制金黄色葡萄球菌生长的作用。它也用于乳过氧化物酶介导的碘化,以制备放射性标记肽。
生化/生理作用
乳过氧化物酶通过灭活多种微生物来促进牛奶的抗菌系统。这种乳过氧化物酶介导的抗菌系统也见于人类分泌物,如泪液、唾液和乳汁。乳过氧化物酶通过释放H2O2催化分子氧化。产物具有抗菌活性。
