碘乙酰胺（IAA）被用于抑制糖酵解，因为它能够不可逆地抑制糖酵解酶甘油醛-3-磷酸脱氢酶（GAPDH）。IAA用于研究半胱氨酸残基在酶催化和脑细胞转运过程中的作用。它可以与巯基乙醇和谷胱甘肽等低分子量硫醇化合物发生反应。IAN还可能阻断菠萝蛋白酶、组织蛋白酶C、梭状芽孢蛋白酶和羧肽酶P等酶。
