生化/生理作用

无花果蛋白酶(Ficin)被归类为硫醇蛋白酶。它的活性位点上含有单个反应性半胱氨酸。其活性位点的氨基酸同源性与木瓜蛋白酶相似。无花果蛋白酶将切割Gly、Ser、Thr、Met、Lys、Arg、Tyr、Ala、Asn和Val羧基侧的蛋白质。据报道,显色底物pGlu-Phe-Leu-p-硝基苯胺的 Km 为0.43 mM。无花果蛋白酶可被碘乙酰胺、碘乙酸、N-乙基马来酰亚胺、氯化汞、DFP(二异丙基氟磷酸酯)、TLCK(Na-对甲苯磺酰基-赖氨酸氯甲基酮)和TPCK(N-甲苯磺酰基-L-苯丙氨酸氯甲基酮)抑制。无花果蛋白酶可用于以高得率产生小鼠IgG1的F (ab′)2 片段。
