生化/生理作用

酪蛋白中的磷酸丝氨酸簇可螯合铁并降低其生物利用度。酪蛋白的部分酶消化可将磷酸化的残基暴露给碱性磷酸酶，从而实现去磷酸化并提高铁的生物利用度。
