酵母来源乙醛脱氢酶用于催化许多种底物氧化,比如乙醛、甲醛、丙醛、正丁醛、异丁醛、N-戊醛、己醛、苯甲醛、糖醛、D-甘油醛、丙二酸半醛和丁二酸醛。酵母来源乙醛脱氢酶用于研究乙醇和异丁醇生产。Sigma的乙醛脱氢酶可结合乙醇脱氢酶测定白色念珠菌(Candida albicans)糖酵解代谢和离子转运过程中的乙醇生产。

乙醛脱氢酶(ALDH)调节非P450醛还原酶系统。它可保护细胞免受有毒乙醛的影响。该基因的突变会导致Sjogren‐Larsson综合征、Larsson综合征、II型高脯胺酸血症和癌症。乙醛脱氢酶2可减轻心肌梗死或心脏手术后的心肌缺血性损伤。乙醛脱氢酶(ALDH)在免疫系统中参与调节性T细胞功能。还参与细胞解毒、氨基酸代谢,并保护细胞免遭紫外线(UV)诱导损伤。ALDH与视黄酸生物合成和信号传导有关。
乙醛脱氢酶是一种四聚体,有几种不同的亚型。乙醛脱氢酶被丙脲,巴豆醛,异氰酸正丙酯,异氰酸环己酯,1-n-丙基-1-[(4-氯苯基)磺酰]-3-n-丙基脲和1-甲基-1-[(4-氯苯基)磺酰]-3-n-丙基脲抑制。该酶在0.01M焦磷酸盐缓冲液中检测,表现为在pH9.3有最大峰值,乙醛为底物。

    Aldehyde dehydrogenase from bakers yeast, product A9770, is a tetramer consisting of subunits of 57 kDa. The molecular weights of its monomer, dimer, trimer, and tetramer are 57 kDa, 114 kDa, 171 kDa, and 228 kDa respectively. The monomers are thought to be assembled into tetramers in a heterologous square arrangement.
