General description
丙烯酰胺是色氨酸荧光的猝灭剂。在电泳过程中,丙烯酰胺使半胱氨酸的SH基和蛋白质的ε-NH2赖氨酸残基烷基化。双丙烯酰胺是交联所必需的,而丙烯酰胺对于单体的聚合至关重要。丙烯酰胺与双丙烯酰胺交联形成聚丙烯酰胺凝胶,可用于分离蛋白质和其他生物分子。
丙烯酰胺(AA)是一种神经毒素和致癌物。马铃薯产品(例如炸薯条、马铃薯片)和一些谷物类产品含有丙烯酰胺。这种高反应性有机化合物能够聚合形成聚丙烯酰胺。
