生化/生理作用
卵清蛋白（OVA）是母鸡中蛋清蛋白的主要成分。OVA在蛋过敏者中刺激IgE介导的超敏反应。该蛋白质也已用于研究过敏原中的结构-功能关系。因此，抗鸡蛋白蛋白（卵清蛋白）单克隆抗体可用作分析蛋白蛋白源食物过敏功能的有用工具。
