α-淀粉酶属于糖基水解酶家族 13。由 A、B 和 C 结构域组成。结构域 A 有两个天冬氨酸和一个谷氨酸作为催化残基。结构域 B 具有 Ca 2 + 和 Na + 结合位点。
应用
α-淀粉酶来自 芽孢杆菌 的淀粉酶。已用于冻干微藻样品的消化。也用于评价 α-海洋藻类样品和Myrmecodia platytyrea中的淀粉酶抑制活性。
生化/生理作用
α-淀粉酶将 α-d-(1,4)-葡糖苷键上的多糖淀粉、麦芽低聚糖水解成α-异头产物。在工业上有广泛的应用,包括 食品、药品、纺织品和纸张。
其他说明
在pH 6.9、20°C下,一个单位可在3分钟内从淀粉中释放出1.0 mg麦芽糖。
