一般描述

α-淀粉酶是糖苷内切酶,属于糖基水解酶家族13 (1-3)。

应用

目前已经采用小麦(小麦种子)来源α-淀粉酶抑制剂确定其对唾液腺 (SG) 淀粉酶活性的影响。此外,这种抑制剂还被用来抑制粉虱提取物的活性。

生化/生理作用

α-淀粉酶可以水解α-(1,4)-D-糖苷键。其可参与淀粉和糖原分解。抑制这种酶的做法可用作龋齿、糖尿病、肥胖症和牙周疾病的治疗策略。
人唾液α-淀粉酶的竞争性抑制剂。KI = 2.9 nM,而KM为5.9 mM(按每摩尔α-1,4-连接的麦芽糖残基计算)。

单位定义

25°C预孵育后,一单位抑制剂可使两单位α-淀粉酶(A0521)活性降低50%。
