General description

卵类粘蛋白或胰蛋白酶抑制剂是大多数禽蛋白中富含的蛋白质。鸡蛋白约由186个氨基酸残基组成，且高度糖基化。三个串联的结构域均与胰蛋白酶抑制剂同源。其免疫原性很高，而且可能是大多数鸡蛋过敏的原因。
Application
胰蛋白酶抑制剂（来源于鸡蛋白）已用于：
- 生产变性、氧化和脱糖基化卵类粘蛋白，用于刺激患者来源细胞培养物以进行T细胞表位作图
- 处理核酸进行流式细胞分析
- Holtfreter溶液，用于分离涡虫细胞
Analysis Note
1 mg可抑制0.8-1.6 mg活性约为10,000单位BAEE/mg蛋白的胰蛋白酶。可抑制≤0.3 mg活性约为40单位BAEE/mg蛋白的胰凝乳蛋白酶。
Other Notes
在25℃、pH 7.6条件下，反应体积为3.2 mL、光程为1 cm时，以BAEE为底物，一单位胰蛋白酶每分钟可产生0.001的ΔA253 。
来自鸡蛋白的卵类粘蛋白本身不会抑制胰凝乳蛋白酶。根据Feeney, R. E.等人 J. Biol. Chem., 238, 1415 (1963)中的方法，胰凝乳蛋白酶抑制可检测卵抑制剂污染。
