一般描述

丹宁酸是最简单的可水解单宁。在丹宁酸的化学结构中其核心含有一个葡萄糖分子,其通过脂肪族酯键连接10个没食子酰基(galloyl)。TA是含量最丰富的天然多酚之一,颜色为无色至黄色,并具有涩味。 它的来源有橡树皮、栗树、毒芹(hemlock)、红树林等。
