由植物合成的淀粉为直链淀粉和支链淀粉的聚合物。直链淀粉是葡萄糖的线性聚合物，而支链淀粉是一种高度支化的聚合物。淀粉是一种可再生和可生物降解的聚合物，广泛用于淀粉纳米粒子（SNP）的开发。淀粉具有灵活的结构特性，并经过修改和功能化，适用于制药应用。淀粉包括快速消化淀粉（RDS）、缓慢消化淀粉（SDS）、以及抗性淀粉（RS）。抗性淀粉可改善代谢特征以及肠道细菌，并具有抗糖尿病功能。抗性淀粉具有低血糖指数，有助于控制体重。它可能能够有效治疗代谢疾病和结肠癌。

制备说明

最佳做法是，首先使用2 g淀粉和少量冷水制备糊状物，然后边搅拌边将其添加到100 mL沸水中。
乳光色不应有明显变化。
