葡聚糖被用于许多应用，如作为血小板凝集剂、血浆增容剂、渗透压调节剂、稳定剂、器官分离介质、基质组分、共聚物、微载体、粘合剂、粘度调节剂、抗血栓形成剂、润滑剂和物理结构组分。肠膜明串珠菌来源的葡聚糖（分子量：670,000）可作为分析标准品，用于校准凝胶渗透色谱 (GPC) 的色谱柱。搭配0.9％氯化钠可从血液中沉淀红细胞。
