General description
Fehling测试的原理基本是以单糖和二糖的还原性为基础，而单糖和二糖的还原性又取决于游离酮或醛基的存在。该测试需要向Fehling A液（即CuSO4）和Fehling B液（即KOH和Na-K酒石酸盐）的混合物中加入几滴糖溶液。Fehling溶液被醛糖还原，产生不溶性黄色或红色氧化亚铜。葡萄糖、半乳糖和果糖等单糖以及乳糖和麦芽糖等二糖能够响应Fehling测试，因为它们具有游离酮或醛基，而蔗糖不含游离醛或酮基，所以不能响应测试。因此，Fehling测试也能用于区分还原糖（如麦芽糖）和非还原糖（如蔗糖）。
