一般描述

Fehling测试的原理基本是以单糖和二糖的还原性为基础,而单糖和二糖的还原性又取决于游离酮或醛基的存在。该测试需要向Fehling A液(即CuSO4)和Fehling B液(即KOH和Na-K酒石酸盐)的混合物中加入几滴糖溶液。Fehling溶液被醛糖还原,产生不溶性黄色或红色氧化亚铜。葡萄糖、半乳糖和果糖等单糖以及乳糖和麦芽糖等二糖能够响应Fehling测试,因为它们具有游离酮或醛基,而蔗糖不含游离醛或酮基,所以不能响应测试。因此,Fehling测试也能用于区分还原糖(如麦芽糖)和非还原糖(如蔗糖)。
