一般描述
葡聚糖（分子量270,000）属于中性多糖家族，是糖加工和其他食品生产行业中的污染物。它们由通过α-（1-6）糖苷键连接的不同长度的D-葡萄糖单元链组成。它们是细菌胞外多糖，据报道是由有益的乳酸菌（如肠膜明串珠菌和短乳杆菌）以蔗糖合成的。它们可掺入焙烤制品中以改善面包屑质地、柔软度和面包体积，可作为糖果、风味提取物，糖衣组合物、饮料（包括软饮料、牛奶等）中的稳定剂和添加剂。
