生化/生理作用

酸性磷酸酶维持无机磷酸盐的浓度。它可在酸性条件下水解正磷酸单酯,还参与马铃薯的块茎发育。可消除磷酸蛋白中的磷酸基团,例如酪蛋白、核黄素结合蛋白、胃蛋白酶原、卵清蛋白和磷脂等。
