酸性磷酸酶是一种非特异性磷酸单酯酶,存在于肿胀马铃薯块茎的细胞质和细胞壁切片中。它具有几个酸性氨基酸残基。它存在于多达六个同工型中,具有不同的糖基化程度。主要马铃薯同工型是摩尔质量为96kDa的同型二聚体。
