应用

生化/生理作用

丙酮酸和n-乙酰甘露糖胺通过醛缩合形成唾液酸。丙酮酸是在售红海藻多聚糖组分之一。[3]在肌肉中，丙酮酸（来自糖原）在使用中被还原成乳酸，在休息时被再次氧化并且部分重新转化为糖原。
