General description

Phytase catalyzes the hydrolysis of phytic acid to inositol and free orthophosphate. [1]

Application

Phytase has been used in a study to quantify the number of feedstuffs showing significant phytase activity. [2] It has also been used in a study to investigate the effect of adjusting the pH to 5.0 (optimum for wheat phytase) during whole wheat bread making on phytase activity. [3]

Biochem/physiol Actions

Wheat phytase can degrade inositol phosphate-6 and 5 at a pH of 4 and 5. [4]

Quality

Crude

Unit Definition

One unit will liberate 1.0 μmole of inorganic phosphorus from 1.5 mM phytate per min at pH 5.15 at 55 °C.

Many plant-based systems have been developed as bioreactors to produce recombinant proteins. The choice of system for large-scale production depends on its intrinsic expression efficiency and its propensity for scale-up, post-harvest storage and downstream processing.
