General description

β-Galactosidase is coded by the LacZ gene, which helps to transform lactose into galactose. β-Galactosidases are used to produce galactooligosaccharides (GOS). Lactobacillus β-galactosidases are heterodimeric proteins, that are coded by lacL and lacM genes.
β-galactosidase is a tetramer made up of identical four polypeptide chains with a molecular weight of 135,000 each and constituting 1023 amino acids. It is very specific for D-galactose and requires K+ or Na+ and Mg2+ to be fully active. It cleaves lactose into its monosaccharide components, glucose and galactose. The sulfhydryl containing enzyme also catalyzes the transglycosylation of glucose into allolactose, the inducer of β-galactosidase, in a feedback loop.

Immunogen

beta-gal antibody was raised against a 17 amino acid peptide from near the amino terminus of E. coliβ-gal.
