General description

L-Ascorbic acid plays the role of an antioxidant in plants in regulating the reactive oxygen species mechanism to form reduced peroxides.[1] It is present abundantly as a non-enzymatic antioxidant in higher plants.[1] It can be synthesized in a variety of plants and in all known mammals, except primates and guinea pigs.[2] It can commonly be used in the prevention of scurvy disease.[2]

Application

L-Ascorbic acid may be used as an analytical reference standard for the quantification of the analyte in fruits and vegetable juice samples using flow injection system with immobilised ascorbate oxidase enzyme.[3]
