    The activity as defined by the supplier Novozyme is as follows:  1 Inulase Unit (INU) is the amount of enzyme which produces 1 micromole reducing carbohydrate per minute under the given analytical conditions using inulin as substrate.  The reducing carbohydrate is calculated as glucose.
