γ-Nonalactone is a flavor volatile compound, belonging to the group of lactones and is one of the minor chiral compound present in vanilla.

Application

γ-Nonalactone may be used as an analytical reference standard for the identification and quantification of the analyte in freshly cooked non-scented rice using modified headspace solid-phase microextraction (SPME) method followed by gas chromatography-olfactometry (GC-O) analysis and gas chromatography-mass spectrometry (GC-MS).
