生化/生理作用

羧肽酶B是一种蛋白水解酶，能够快速水解肽键，从而从肽和蛋白质中释放某些羧基末端碱性氨基酸。其分子量为34,300±600 Da。其每摩尔含有一克不可透析的锌原子。金属螯合剂1,10-菲咯啉、8-羟基喹啉-5-磺酸、和2,2′-联吡啶可抑制该酶活性。
