白蛋白是可见于动物体液和组织及部分植物种子的一类可溶性单体蛋白。 血清白蛋白可作为类固醇、脂肪酸和甲状腺激素的载体蛋白。 血清白蛋白在调节血液的胶体渗透压方面也至关重要。
物理属性
从N端删除单个Asp可产生低过敏性构建体。X射线晶体学证实了其与天然白蛋白的结构等同性。Asp缺失通过消除白蛋白主要的铜镍结合位点而去除了重要的抗原决定簇。人白蛋白的前三个残基被认为是非结构性的。还在Cys34上进行阻断，以改善稳定性、单体含量和均一性。
