General description
葡聚糖是一种以 α-1,6-糖苷键为主的多糖,由只能在含蔗糖培养基中生长的细菌肠膜明串珠菌产生。
葡聚糖是分子量≥1,000道尔顿的多糖,有一条α-D-吡喃葡萄糖基重复单元连接的线型主链。葡聚糖是细菌胞外多糖。它们是由肠膜明串珠菌和短乳杆菌通过蔗糖合成。细菌利用葡聚糖形成生物膜,在病原菌中则以其为保护膜避免接触宿主噬菌细胞。
